Ingredients for Nepali Sel Roti Recipe :

1. Rice (soaked overnight) – ½ kgs
2. Sugar- 250 gms
3. Semolina- 250 gms
4. All-purpose flour (maida) – 100 gms
5. Clarified butter (ghee)- 2 tablespoons
6. Baking soda (optional)- 3 pinches
7. Cooking oil- ½ litre

Traditional Recipe of Sel Roti:

Soak rice for overnight, then with the help of a strainer or a clean piece of cloth, drain out all the water and let it dry naturally before you start the preparation of Sel Roti. Now put the rice into the grinder to grind it well till it becomes a fine powder.

In a separate vessel mix sugar, ghee, semolina and the ground rice flour together. Mix them well together and add lukewarm water. If the paste becomes thin, you can always add rice flour or semolina. To make the roti fluffier you can add 3 pinches of baking soda to the prepared mixture.

Put oil in a kadhai and heat it till it is steaming hot. Make sure to place around iron mould in kadhai before the oil starts getting hot. A mould ensures the round shape of the Sel Roti. Now take the batter in your palm and pour the batter in the hot oil giving it a round shape around the mould. Flip the roti with the help of a stick once one side becomes golden brown, and fry it till both the sides are golden brown in colour. Now take the crispy, sweet and tasty nepali Sel roti out of the kadhai and serve hot for eating with aalu achaar or tea or meat on the side.
